Instructions
Preheat oven to 350 degrees. Oil or spray a muffin tin and set aside.
Mix the ground beef, diced onion, chopped bacon, garlic, parsley and eggs together in a large bowl.
Divide the mixture between the 12 cavities in the muffin tin. Top with the grated cheese.
Place in the oven and bake for 15 to 20 minutes, until cooked in the center.
Remove from muffin tin and place on a paper towel to drain the excess grease. Serve immediately or allow to cool and place in the refrigerator for up to 3 days. Or place in the freezer for up to 3 months.
Notes
Play around with the flavors. Italian seasoning + mozzarella or provolone cheese + sun-dried tomatoes. Oregano + Feta cheese with ground lamb.
Use any combination of ground meat that your family enjoys.
Serve with ketchup or barbecue sauce.
