Healthy Pumpkin Smoothie

What happens when you mix pumpkin and spices into your green smoothie? You end up with a delicious, fall inspired Healthy Pumpkin Smoothie that is keto and paleo friendly! Do not let the color scare you away, it is delicious!!

Some of you may not know this, but I am allergic to bananas, coconut and avocados. Smoothies traditionally have a frozen banana in them to thicken them up, but I can’t do that…and bananas are not keto anyway. So I had to get creative!

I decided to add frozen riced cauliflower and spinach, but I still needed fat and something thick. So I topped my Healthy Pumpkin Smoothie with whipped cream! I know, it’s not a pumpkin milk shake but it looks pretty and adds what I needed. You could also add the heavy whipping cream to the smoothie itself to make it thicker and skip the whipped cream on top.

How to make a Healthy Pumpkin Smoothie

Pour the milk of your choice, canned pumpkin, pumpkin pie spice, vanilla, MCT oil, stevia,frozen cauliflower and frozen spinach into a blender.

Puree until smooth. I ran it through 3 cycles to make sure the spinach was pulverized.

Add the collagen powder and Pulse to combine.

Garnish with whipped cream (if desired), sprinkle with pumpkin pie spice and raw pumpkin seeds and serve immediately.

I am still trying to figure out if this Healthy Pumpkin Smoothie is a snack or a dessert? Either way, it is insanely good!!

I would use caution when indulging in one of these smoothies. Make sure the rest of your day is very low-carb to offset the amount of carbs in this drink. 🙂

Recipe Tips & Tricks

  • For Paleo – substitute 1 to 2 tablespoons of maple syrup or honey for the stevia, and substitute coconut whipped cream.
  • Feel free to substitute a confectioners’ version of Monkfruit or your favorite sweetener for the stevia.
  • Depending on how sweet your pumpkin is, you may not even need a sweetener.
  • Use raw or dry roasted pumpkin seeds. Regular roasted seeds are coated with canola oil.
  • I used Bulletproof Unflavored Collagen Peptides and recommend Bulletproof Brain Octane for the MCT oil. MCT oil is made from coconut so I did not actually add it to my smoothie.

Ingredients

  • 1 cup unsweetened almond milk
  • .25 cup canned pumpkin NOT pumpkin pie filling
  • 1 tablespoon MCT oil
  • 0.5 teaspoon pure liquid stevia
  • 1 teaspoon pure vanilla
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 cup frozen cauliflower rice
  • .25 cup frozen chopped spinach
  • 2 tablespoons sugar-free whipped cream substitute coconut whipped cream for vegan – or blend heavy whipping cream into the smoothie for added thickness.
  • 1 teaspoon raw pumpkin seeds
