Cilantro Lime Cauliflower Rice is healthy, easy to make and the perfect side dish to serve with Mexican, Asian or Tex-Mex food. Just think of the chicken bowls and taco salads that you can make, and your family will love it!

How to make Cilantro Lime Cauliflower Rice

Pour the riced cauliflower in a non-stick skillet and heat over medium heat until all of the moisture has cooked off.

Add the lime juice, salt, pepper and chopped cilantro to the skillet, stir to thoroughly combine.

  • For even more lime flavor add lime zest to your rice.
  • Cooking times may vary, all stoves cook differently.
  • Add a small amount of water to the pan if the cauliflower begins to stick to the skillet.

Can I use frozen cauliflower rice?

Yes, of course you can! In fact, I used frozen in the images above, it’s just so much easier and sometimes cheaper than using fresh cauliflower. If using fresh cauliflower, add 2 tablespoons of water or olive oil to pan when cooking.

Do you use the cilantro stems?

Yes and no. I chop my cilantro then fluff it up and drop it gently down onto the cutting board to separate the thick, woody stems. I toss the woody stems and use the smaller ones, they add a lot of flavor!

  • 2 Tablespoons lime juice and zest for more intense lime flavor
  • 2 teaspoons finely chopped cilantro
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
