Meatloaf Muffins
I know I have said this before, but I think I have a new favorite recipe! These Meatloaf Muffins with cheese and bacon are so easy to make, the flavor options are endless, and they are perfect for lunch…or dinner!
Heck, you could even eat them for breakfast! Keep the leftovers in the refrigerator and pop in the microwave whenever hunger strikes, I mean when you are ready for your next meal. 😉
How to make Meatloaf Muffins:
Preheat oven to 350 degrees. Oil or spray a muffin tin and set aside.
Mix the ground beef, diced onion, chopped bacon, garlic, parsley, salt & pepper and eggs together in a large bowl.
Divide the mixture between the 12 cavities in the muffin tin.
Top with the grated cheese.
Place in the oven and bake for 15 to 20 minutes, until cooked in the center.
Remove from muffin tin and place on a paper towel to drain the excess grease. Serve immediately or allow to cool and place in the refrigerator for up to 3 days. Or place in the freezer for up to 3 months.

Recipe Tips & Tricks
- Play around with the flavors. Italian seasoning + mozzarella or provolone cheese + sun-dried tomatoes. Oregano + Feta cheese with ground lamb.
- Use any combination of ground meat that your family enjoys.
- Serve with ketchup or barbecue sauce.
- I used Red Boat Fish Sauce because Worcestershire sauce contains molasses.

- 1 1/2 pounds ground beef
- 1/4 cup chopped onion
- 2 Tablespoons fish sauce I use Red Boat – can omit or substitute Worcestershire sauce
- 1 large clove garlic minced
- 2 slices bacon chopped
- 2 Tablespoon Italian parsley chopped
- 2 large eggs lightly beaten
- sea salt and black pepper to taste
- 3.5 ounces shredded cheddar cheese
